Nik Neubauer, originally from Germany and now based in Copenhagen, co-founded AERIS Cocktails with Dia Jovanovic in 2021. @aeriscocktails focuses on handcrafted cocktails that match the quality of those served in high-end bars. Today, they supply cocktails to private customers and a wide range of different brands—including a hotel group where Nik worked when he was 17.
Which cocktail is best to start a night with, and which is best to end on?

To start the evening, I’d go with a Whiskey Sour or a Margarita with Mezcal (we have an excellent Grapefruit Margarita for example in our classic line). They’re light and refreshing. And to end the night, I’d probably go for an Old Fashioned, it rounds things out nicely.
AERIS released its first soda last year, marking a completely new venture. Can we expect you to expand into other fields in 2025?
Yes, for sure we will release a new flavor of the soda this year and look into more seasonal and special release cocktails. The focus this year is as well to be a bit more international for example we will be attending Salone de Mobile in Milano, Paris Fashion week and looking into festivals in countries like Sweden and Netherlands.
Several fashion brands has done event with you—what connection do you see between AERIS and the fashion world?
The fashion industry was kind of our stepping stone into our adventure. Our very first customers were fashion brands, as our product very much resonated with their aesthetics. I believe there’s a lot in common with us and fashion brands – especially craftmanship and a passion for design. That’s definitely something we share with O. FILES. We wrapped up 2024 by serving cocktails for Celine for example, which was super nice.

You wore a full O. FILES outfit at the ELLE Gala in Stockholm last year. What was your favorite piece?
Yes, I absolutely loved the outfit, would like to wear it every day ha ha! Most of my wardrobe today is O. FILES, it’s such amazing quality that you can easily mix and match. My favorites would be the Origami pants and the coat for sure - already planning my O. FILES outfit for this year Elle Gala in Stockholm.
What cocktail is your guilty pleasure?
I love a simple, well-made Negroni or Martini, I’m a big fan of the classics. I love when there is an experienced bartender behind the bar, crafting an amazing drink with just a few ingredients. I don’t need fancy decorations, smoke, or anything like that.
What’s your most memorable moment with AERIS?
Hmm good question! Me and my co-founder Dia actually spoke about it the other day, and looking back at these years we’re in awe of so many things. Instead of highlighting a moment, because there are so many, we agreed that when we’re dusty and old what we’ll remember is the fantastic people and companies we’ve worked with over the years. And we’ll remember the pure joy over small victories and hard work which together has made Aeris the success story it is today. Hopefully we get to do this many, many more years to come!
